Central Wiener schnitzel
How is the Wiener Schnitzel prepared at Central Grand Cafe?
At Central Grand Cafe, our Wiener Schnitzel is made using a classic technique, with maximum freshness and attention to detail. We use pork, which is pounded thin, seasoned with salt, then coated in flour, egg, and breadcrumbs before being fried to a golden crisp in hot oil. The result is a schnitzel that’s crisp on the outside, juicy and flavorful on the inside – just as it should be. It’s served with a traditional Viennese potato salad featuring red onion, Dijon mustard, leek, and fresh radish. To balance the flavors, we also offer a house-made cucumber salad with sour cream and a hint of paprika. The dish is topped with a flame-charred lemon half, ready to be freshly squeezed at the table for an added burst of brightness.
Why did we choose to offer this dish?
The Wiener Schnitzel is a cornerstone of café cuisine – timeless, classic, and beloved. It perfectly fits the spirit of Central: traditional yet refined, comforting yet elegant. With quality ingredients and precise execution, we aim to give this familiar favorite new vibrancy, honoring its heritage while appealing to today’s guests.
What makes Central’s Wiener Schnitzel special?
The perfect texture – crisp on the outside, juicy inside – comes from expert frying technique. But the sides play a key role too: our potato salad is bright and lively thanks to Dijon mustard and fresh vegetables, while the cucumber salad’s creamy tang offsets the richness of the main dish. The flame-charred lemon is more than a garnish – it brings a subtle caramelized note that elevates every bite. Central’s schnitzel is a nostalgic yet modern experience – rooted in tradition, refined for the present.
Potato salad and the Monarchy – a flavor that unites
Viennese-style potato salad is more than a side – it’s one of the most elegant and enduring culinary legacies of the Habsburg Monarchy. From Austria to Hungary, Croatia to the Czech Republic, every region has its version, united by their simplicity: thinly sliced boiled potatoes in a light, tangy dressing with onion, mustard, and herbs. Our version features red onion, Dijon mustard, leek, and fresh radish – a nod to the past, with a taste that speaks to today. It’s not just a perfect companion to schnitzel – it’s a reminder of a shared culinary heritage.
In pursuit of the perfect crisp
A true Wiener Schnitzel must do more than look golden – it should crunch. At Central, we achieve this with traditional technique: the meat is pounded thin for even cooking, and the breadcrumb coating is applied loosely to ensure it lifts and bubbles away from the meat during frying. The temperature of the oil is precisely controlled to create a crust that’s crisp and golden on the outside, while keeping the inside tender and juicy. Each schnitzel is freshly fried to order, ensuring a hot, vibrant, and nostalgic experience with every bite. This attention to detail transforms the dish from simple to exceptional – a golden icon done right.
